All the salt listed on the site uses the volume of regular table salt unless posted otherwise. We however use fine sea salt which is non-iodized, the same size as table salt, when we make sausage. It's the only salt we use in our house. If there are any recipes on the site that use a coarse salt or Kosher salt, it will be clearly stated.
